Since 2009, Ed & Tom’s Bar-B-Que has been serving up real Texas smoke, big portions, and small-town hospitality right here in Odessa.
In 2009, Ed rolled up his sleeves, fired up the pit, and opened a little BBQ spot on the east side of Odessa with one simple goal: serve the kind of food he’d be proud to feed his own family.
Word spread fast. Truck drivers started planning their routes around Ed & Tom’s. Local workers lined up on lunch break. Before long, the restaurant walls were covered in signatures, notes, and photos from people who had become more like family than customers.
Over the years, Ed & Tom’s has been recognized in local Best of the Basin awards and featured by community organizations across the Permian Basin — but the real honor is seeing the same faces week after week, bringing new friends along.
Behind every plate of brisket, ribs, sausage and meatloaf is a crew that treats this place like home. These are just a few of the faces you’ll see smiling behind the counter, running plates, and checking on you at the table.
